I started off with a salad I make all summer long... Strawberry Spinach Salad with the one exception since I didn't have strawberries I substituted Ranier Cherries! They were finally on sale and I HAD to grab them up. The cherries tasted great with the salad...

Strawberry Spinach Salad
Juice of 1 lemon or 2 Tbsp lemon juice
2 Tbsp white wine vinegar
⅓ Cup of sugar (or less to taste)
1 Tbsp vegetable oil
1 tsp poppy seeds
8 oz (1½ C) strawberries ¼’d
½ med cucumber sliced and cut in ½
¼ Cup small red onion - sliced thin
1 pkg (6 oz) baby spinach
¼ Cup toasted almonds
Whisk ingredients for dressing and refrigerate.
Place spinach in a “large” bowl, add strawberries, cucumbers & onion, Whisk dressing, pour over salad, gently toss to coat. Sprinkle with toasted almonds and serve.
My sister,Laurie, turned me on to this recipe for "Yummy Honey Chicken Kabobs" from All Recipies! Make sure you read the reviews and DOUBLE the sauce...you won't regret it! What's great about this recipe is you actually substitute whatever you want for your kabob. Personally I love mushrooms, so I added big, juicy fat ones! Added a nice ear of summer sweet corn and the meal was perfect.
