Flashback Friday and Foodie Friday




One of my favorite bloggers Suzy at Kitchen Bouquet inspired me to do a Flashback Friday! Since I am yearning for green grass, sunshine and being outdoors, I am sharing with you one of my favorite 'Think Spring' meals. Trust me, this will become one of your summer staple meals!!



Coconut-lime chicken and snow peas salad
1 Cup coconut milk
1/4 cup lime juice
2 tablespoons brown sugar
1/2 teaspoon salt
8 ounces chicken tenders
4 cups shredded romaine lettuce
1 cup shredded red cabbage
1 cup sliced snow peas
3 tablespoons minced fresh cilantro
2 tablespoons minced red onion

Whisk together coconut milk, lime juice, sugar and salt. Transfer 1/4 cup of the dressing to a large bowl; set aside. add lettuce, cabbage, snow peas, cilantro and onion to the large bowl with the dressing; toss to coat. Divide between 2 plates.

Sauté chicken in olive oil and s&p, add coconut milk mixture and cook for 10-15 min. transfer the chicken to a cutting board and thinly slice. Arrange the chicken slices on top of the salads. drizzle the coconut cooking liquid over each of the salads.

Freaky Foodie Friday Trainwrecks!



I've had many a 'trainwrecks' in the past years..but I must say the earliest and most memorable one happened in 1971 with my Mom in the hospital I was delegated to cook Thanksgiving Dinner! MY first one, mind you, and no one giving me much instruction. Being the dutiful daughter I read up on getting the turkey ready, making stuffing and all the trimmings. I had all the side dishes prepared and ready to go on the table. Just waiting for that little 'pop-up' doohickey to pop up on the turkey signifying it was done. Waited and waited..finally my Dad said just to take the $%^& bird out of the oven. As it turned out, I had taken the packet of giblets out of the turkey but on one had mentioned the frozen neck in the neck cavity! (Which will delay the po-up timer) All in all it turned out to be a somewhat delicious meal, and one which I was reminded of by my brother and Dad for almost EVERY Thanksgiving afterwards!!

First of all, what a great combination post! I hadn't thought to add coconut to chicken..how fresh and tasty!

Re: the turkey neck, lol, I'm smiling. I've done that, too, lol. I always get paranoid over turkeys and hens. Search, search. Call in Dr. G for his opinion. Yep, the neck is gone! I'm the same way with Mr. Linky. It scares me every Friday. When I type in the code for two columns (and 3 columns creates a horrid mess), I always get so nervous.I triple checked the code this week and STILL messed it up. Had to go back. Luckily, this time, I didn't erase all of the links.

Barb, I, too, can relate to leaving the neck in the turkey cavity.

I love snow peas in salad and with the chicken and lime and coconut seems like a great combination.

Funny story, Barb! Ever since hearing the story my MIL told of leaving all the extra parts in the turkey one Thanksgiving, I have always looked in all cavities very carefully ;)

I didn't know the frozen neck would delay the pop up. I learned something today. At least you didn't do what a co-worker did one Thanksgiving...forget to turn on the oven.

Yummy recipe, thanks! And in 1978, cooking my first Thanksgiving dinner, I didn't know you couldn't cook a FROZEN bird. I had to send brand new hubby out for a fresh one, kept the frozen one in the fridge, and cooked it 2 days later.

We ate turkey for months.

The salad looks great! The addition of coconut is very interesting..And then you could have a Pina Colada! :)

This salad looks great! It's getting warm here, this looks like just the ticket for a hot weather meal. And I loved your turkey story, I'm sure that they love to remind you of it constantly! But they ate it, right lol. Kathy

I love the turkey story. Believe it or not we paid to have a turkey smoked once at our favorite BBQ place. When we were slicing it up at home we found all of that inside too. Eww!!

haha...so many of the trainwrecks this Friday have a turkey involved...mine, too!

Great story Barb! My turkey didn't defrost one year - we have chicken breasts!

Loved the turkey story and the salad recipe is sitting in my printer tray. That looks like a really good Spring and Summer salad! Have found reduced fat coconut milk so we can be relatively guilt free, :) nancy

Barb what a great post. Your salad looks great. I love this combination of flavors. I'll definitely give it a try. You make the best things..really. We have similar tastes. Love your turkey story. I had the neck thing happen to me too but luckily it was only a chicken dinner not turkey. You became a turkey expert early!!

What a great chicken salad! I love the flavors in the dressing, coconut and lime are two of my favorite ingredients.
