What to eat when it's -25 degrees....

Needless to say it has been bitter cold this past week where the REGULAR temp without wind chill got as low as 25 degrees below zero!  All you want to do is cuddle up on the couch with blankets and watch TV...and make sure you don't drink too much of anything so you won't have to get up and make that cold trip to the bathroom!   You also want to be sure the phone is close by and the dog has been let out before you get comfy.




I wanted something soothing and filling, and after seeing Kathleen's blog this week I decided on Chicken Pot Pie!  But, alas, I didn't have the cute word cut-outs that Kathleen has to label my pot pie! 

There was even enough left over to freeze  (I hate that word) some for later on.  My filling is just a combination of many I have found throughout the web world.  Onions, carrots, celery, some flour to make a rue, chicken stock, milk, small handful of chicken granules,thyme, parsley, s&p and a little lemon juice. I roast chicken breasts with Herbs de Provence.  Throw it all together and simmer, ladle it in dish of your choice and top it off with puff pastry!  I made a few little stars out of the pastry to garnish the top... put in oven at 400 for about 20 minutes and you're ready to eat.  Keeping things easy and simple is the way I like to cook on cold days...

Barb, a perfect meal for your extreme cold weather ... What a gorgeous crust on your pies .. love the addition of the stars. And the little Staub pots are perfect.

I hope you get a break from the cold weather soon.

I made one this week too! I am having trouble making my dogs go out at all--they want me to go with them and suffer too :) Stay warm! Love your cutouts!

That is one fine looking chicken pot pie - cook book worthy, for sure.

Thomas actually lives across the street and just stops by on his neighborhhood rounds - I wish we could keep him!

Lovely meal for a cold day! And I really like the puff pastry top; much lighter than the normal pastry.
It' been a 25 windchill here and I live in South Florida! Everyone is cold right now.
