The recipe came from a post Susan of Savoring Time in the Kitchen. Click on her name for a link to the recipe. I was a little hesitant to think you could actually have a cupcake that could taste like Angel Food, but after trying this recipe I know I will be making it quite often. The recipe is actually for a Lemon Angel Food Cupcake... instead of the lemon zest I used some of my lemon oil.
The only other change I made was to use a Marshmallow Frosting instead of the one listed with the recipe. It reminded me more of the old-time 7 minute frosting you usually see with Angel Food, but not as much work!!
MARSHMALLOW FROSTING
Beat together:
2 egg whites and 1/4 tsp. salt
until very very Frothy.
Slowly add:
1/4 cup white sugar
Beat until very smooth thick and glossy.
Slowly add:
3/4 Cup light Karo Syrup.
Beat until stiff, stiff, stiff Peaks form.
Gently:
Fold in 1 tsp. Pure Vanilla
Frost cupcakes, cake or pipe on.
Don't cover cake tightly.
I like the way the frosting pipes such a pretty look even though you will get an upper lip of some soft, gooey frosting with the first bite. It's worth it!!
My sister Bev and her hubby Dave host all of our Holiday celebrations...they have the room IF everyone shows up. She had this cute set of egg shaped salt & pepper shakers... they had belonged to another sisters', Julie, mother-in-law. Have no idea how old they are but I would guess at least 50-60 years old if not more.

These cupcakes remind me of something my mother used to make, especially the frosting. They look so yummy.

I made the angel food cupcakes way back when we were darling bakers too but not that delicious frosting - I bet it was well worth the marshmallow mustache :) What a quiet Easter celebration it could have been for you without the whole family attending but knowing you - there was nothing quiet about it :) Belated Easter wishes to you my friend!

It is a great way to have something sweet to end the meal without going overboard with calories and fat! I used to order these same oils and used them for a long time! Great cakes!
I've never made angel food cupcakes..can't imagine why I didn't think of it 'cause I love angel food cakes! And 7 minute frosting! So if your frosting recipe is close and not so time consuming, I'm all over it! Love these recipes, Barb.
