Came across some nice big strawberries this weekend at the grocery store. Didn't know at the time what I would do with them, probably just snack on them. Then, this afternoon, got the brilliant idea to make a pie! My sister, Laurie, gave me this recipe a few years ago and it has been the only strawberry pie recipe I use. Primarily due to the fact it comes together so quick and easy that even I can't screw it up!
Just mix together the sugar, corn starch & water, heat until it boils and thickens ...
Add the small box of strawberry jello ...
Put the mixture in the refrigerator to cool... while waiting for it to cool quarter up some strawberries..usually a pint is sufficient
Mix the strawberries into the cooled mixture and pour into a small graham pie crust or any type of pie crust you like. Using the premade graham pie crust just makes it that much simpler...
Cool in the fridge for 1-2 hours until set, top with some whipped cream if you like...
How simple is that? Perfect way to use up the strawberries, the fresh taste reminded me instantly of a hot summer day. Now if Mother Nature would just catch up and start giving me warmer weather and a daily basis!!
Easy Strawberry Pie
1 cup sugar
3 Tbsp cornstarch
mix these then add 1 cup water and mix again
bring to boil -when it begins to thicken and bubble remove from heat
add 1 small package of strawberry jello and let cool
when cooled add cut up strawberries (one pkg is usually enough) Pour into graham cracker pie crust (small one)
Refrigerate 1-2 hrs or until firm

Funny Barb, I made this pie this weekend too! Probably bought the same berries you did at the store and it was delicious. I think this pie can be a bit too sweet sometimes, so I substitute splenda for the cup of sugar and it turns out great.
