Pumpkin Cupcake with White Chocolate Cardamom Buttercream

One more fall cupcake I have tried is the Pumpkin Cupcake with White Chocolate Cardamom Buttercream frosting.  Actually I got the idea from an episode of  "CUPCAKE WARS" on the Food Network!  It sounded so good, and received good reviews from the judges.


HOWEVER, though the cupcake was super moist, it was lacking in the pumpkin flavor.  I should have added some pumpkin pie spice or something.  It just didn't have the "WOW" factor at all, in my opinion.
I used this Taste of Home Recipe.   For the Buttercream - I googled and came up this recipe:



White Chocolate Cardamom Buttercream


2 sticks (1 cup) unsalted butter, room temperature

8 ounces white chocolate, chopped

1-2 cups powdered sugar

1 teaspoon pure vanilla extract

1/4 teaspoon cardamom

1. In a heat proof bowl over a pan of simmering water, gently melt the white chocolate. Allow to cool for 2 minutes or so.

2. Using an electric mixer, beat the butter at medium speed until creamy.

2. Beat in the melted white chocolate.

3. Add 1 cup of powdered sugar, vanilla, and cardamom and beat at low speed, scraping the sides and bottom of the bowl, until light and fluffy. Add more powdered sugar to arrive at the consistency and sweetness you like.





I could not get the "buttercream" consistency I am used to... the flavor was OK but not a recipe I would make again.  Back to the drawing board on this one, I will have to look for another recipe since I did love the taste of the white chocolate and cardamom.


Trying my hand at carving pumpkins after seeing Debbie's (Mountain Breaths) Moms' collection of carved pumpkin.  Check out her display - UNBELIEVABLE!!   I evidently do NOT have her patience since I was breaking and bending those cute little orange 'saws' from Michael's.   Doing the best I possibly could I will attempt to do some more next year.  I plan on marking the year on the bottom of the pumpkin to see how I progress.  I'll take another photo once I have them lit up for Halloween..maybe they will look better !  :)

Sorry I don't have a better review for you but I don't want you to be disappointed if you do decide to make them.  Just remember, as we all know by now, everyone's tastebuds are completely different so it's possible some of you will absolutely love it.   JUST .................

Barb, you did a fantastic job with carving the pumpkins! After Halloween, go and purchase some of those plastic carving tools when they are on sale. As you get more experienced with the carving, the tools will last longer ;o) I love cardamon, so I hope you find a buttercream with cardamon that you really like and share it with me!

The combo of pumpkin, white choc and cardamon really sounds like an interesting flavor combination. I hope you find a frosting recipe that you will like better. I like the bone appettit decoration - made me smile before I had even finished my coffee :)

Your pumpkins are wonderful! I have my pattern downloaded but life has been to busy here this week so I am hoping to try my luck next week. Good to know that I should by an extra carver "just in case".

I also like the candy pumpkins in the candle holder - great & creative idea to use them.

Surprised it doesn't have the WOW factor because it looks fantastic!

The pumpkins came out terrific! and have to say, I'll be sorry when Halloween is over, your header really is just the cutest!

I went through this last year with some pumpkin cookies....something was missing and we didn't like them. The one thing I CAN say is your muffins LOOK cute! :)
