Chocolate Covered Coconut Macaroons

For the beginning of some Christmas baking I decided to try something I have never made before this year.  I searched about a dozen recipes before I found this video from Alton Brown.  I liked the idea of topping the macaroon with some dark chocolate, even though they were fantastic right from the oven without the chocolate!

The edges were crispy, the middle nice and chewy.  I'm not a huge fan of coconut, except when it is toasted or baked.  These were fantastic, A definite keeper.

Alton uses chopped macadamias, I used chopped pecans.  Any chopped nut would work, whatever your favorite nut may be.

NOTE:  My oldest stopped over tonight and ended up taking over a dozen home with him, he thought they were awesome and wanted to take some to a friends house!  I told you they were good!!

Shoot, Barb, these are awesome. I have nothing obnoxious to say. You didn't even burn them or anything! Definitely have to make these, I love it with the pecans and the chocolate.

Oh yum! They look great! I have made macaroons, but not with the chocolate. Like a Mounds bar!

These look great Barb. I love everything in them :-) I haven't made anything with coconut yet this year. These would be perfect! Your divinity in your header sure is gorgeous. I make my grandmothers "no fail" recipe every year. This year it was a was kind of humid today so maybe thats why. Of course they will still get eaten but they are not fluffy like they are suppose to be.

They look delicious, Barb! I LOVE coconut. I'm going to check out the recipe to save if I have any more time to bake this year - otherwise, next year!
