Mixed Fruit Pavlova



Something I always wanted to attempt was to make a Pavlova! I have seen numerous videos and recipes ranging from various flavors to difference in sizes.

The recipe I used was for a Mixed Fruit Pavlova found on Epicurious. There is a detailed video and recipe which can be found HERE.

In the Pavlova I made, the fruit used were Mango, Strawberries, Grapes and Blackberries. Pleasantly surprised in the outcome of the meringues, which were chewy on the outside and soft on the inside. Filling the meringue with the pastry cream made the ideal "nest" for the fruit. By topping the fruit with apricot glaze was just the thing to bind all the fruit together, and the raspberry sauce was heavenly!



These will most definitely be on my list for summer desserts... something that is light and doesn't make you feel guilty after devouring every bite!

This looks refreshing for a hot summer day. The first time I made this was years ago and I had no idea what it was. I was given a recipe for a cooking club and told to make 12 of them. Now a photo would of helped me but I had non and it was before PC. It took me forever as I made all 12 the size of a dinner plate. I had no idea I could make 12 mini ones. Talk about a novice baker and also dumb. I laugh now. Live and learn they say:) So every time I see this recipe I chuckle. Your Mothers day tribute sounds like fun. I will put on my thinking cap for sure.

Barb, the pavlova, the glazed fruit ... VERY pretty .. And I'm sure it was delicious with the addition of the pastry cream. Absolutely over the top.

I copied and pasted a recipe that Sol from Memories in the Baking posted on the CF a few years back. Since you've mastered the pavlova, it would be a cinch.
