Panera Bread Broccoli Cheese Soup

Seems like Mother Nature doesn't know if she is coming or going! We've had evenings dip in the low 40's, and has been chilly and windy the last few days..so it was the perfect time for some warm, filling soup!

One of my favorites is broccoli cheese soup and the one recipe that in my opinion is above all other is Panera Bread Broccoli Cheese Soup
Topped with a buffalo spicy croutons, homemade by a friend of mine!

So thick and creamy, absolutely heaven!

Best of all, it makes enough so you can have more than one meal!

Yearning for warm weather - here are a few of my beauties in the garden...

Wishing for warmer weather.....

Barb, your soup would be perfect for our chilly weather today. Yesterday it was 83, today it is 53. You're right about Mother Nature. But, glad she brought you some beautiful blooms!

Barb, pretty flower pictures ... what is the first one? I've seen it before but don't remember its name.

Tara LOVES Panera's Broccoli Cheese Soup ... I must make this for her one day.

Your pictures make it look much more enticing than what you get at Panera's. The buffalo spicy croutons sounds like a nice touch.

We woke up to the 40's today also; Tuesday it's supposed to be in the mid 80's. Don't you just love midwest weather!

That soup looks so delish! I'll have to pop some of my Lactaid though :-) Well worth it I'm sure. Your plants are looking real pretty. Hope you get warm soon again.

Barb, what a beautiful looking soup for weather like we have been having. I am not a big broc/cheese fan but your soup with the buffalo croutons makes me want to go and try it! I love all the beautiful flowers you have. My globemaster is trying to burst open but needs a few days yet.

Thank you all - the first flower is an allium - but it's not my big globemaster..that is opening slowly and I will post a photo as soon as it opens. I planted the globemaster last fall, so this is it's first bloom.

DH always orders this soup from Panera when we to take out from there in the winter. I'll have to make it for him at home when we have a cold snap next (hopefully, not for a long time!). It looks yummy!

Thanks for mentioning this recipe in your comment on my Asiago Cheese bread, Foley. I came running over here to find the soup recipe & now I can't wait to make it. Its a chilly, rainy spring day here & would be a big hit for supper tonight. Thank you for posting it!

Thanks so much for telling me about it, especially the addition of Dijon mustard & hot sauce. Really kicked it up a notch!! :D
