Time To Use Up The Bananas....

Had three rather dark bananas sitting on the counter that needed to be used or thrown!  I remembered Carol from Theres Always Time To Cook posting some recipes so decided to try one of hers instead of my old tried and true recipe of my Mom.



Good tasting but I think I would add a little more salt the next time...texture was great and the flavor was spot on.  The only nuts I had on hand were pecans, they worked well with the recipe. 

Instead of using one big loaf pan I used some mini ones and some heart shaped mini pans to experiment for Valentines Day!!  Also, this way I can give most of the loaves to my family and friends.  The recipe made 5 mini loaves and 2 heart shaped ones!



This is the recipe I used:

Banana Bread

 1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup butter, melted
1/2 cup brown sugar
1/2 cup sugar
1 egg, beaten
1 1/3 cups mashed bananas (about 3 medium bananas)
1 1/2 cups finely chopped walnuts

Set the oven rack in the middle position. Preheat the oven to 350 F. Line a 9 X 5 X 3-inch loaf pan with a strip of parchment and coat the pan and the liner with cooking spray. 
Sift together flour, baking soda, salt, and nutmeg.

Cream butter and both sugars in the bowl of a standing mixer fitted with the paddle attachment. Add egg and bananas and combine. Add sifted dry ingredients. Fold in nuts.

Pour batter into the prepared loaf pan. Bake 50 to 55 minutes, or until loaf comes out clean. Cool on rack. Store covered with paper towel and wax paper at room temperature.

Banana bread is such a good standby. I really should make it more often. What do you ice it with or do you leave it naked?

We love banana bread too but have to have choc chips in ours :) That is a huge amount of bread from 3 bananas - I will have to Carol's recipe sometime soon (once I get the okay to eat bananas again that is).

Barb, I love banana bread ... prefer walnuts but don't mind pecans AND never chocolate chips. I'm the only one in the house that eats it, so I rarely make it. I like that you made mini ones ... portion control or in your case to give away. :) Now, I'm craving banana bread ...

The pecans sound perfect to me! I like to put poppy seeds in my banana bread too ;) I haven't made BB in too long!

I love banana bread! I could eat it for breakfast...and have! lol I also checked out your Popover Chicken Tarragon recipe and I am trying that one for sure! I have a French friend who makes guinea hen tarragon and it is wonderful! I love the taste of that spice! Happy weekend...Debbie
