FLASHBACK FRIDAY...MEAT LOAF !!

Joining Suzy of Kitchen Bouquet with Flashback Friday... I think the meat loaf was even before my official blogging days!


One of the great comfort foods all over the country.  I orginally used the recipe right off the Quaker Oats box, then started adding in whatever I liked at the time...  Lots of diced onions is a must, then any seasonings you particular like.  A number of years ago my SIL convinced me to add thinly sliced potatoes on the bottom of the meat loaf.  Half way through baking, I drain the meat loaf to get rid of some of the fat from the ground beef. 



In the last ten minutes of baking I mix together brown sugar and catsup for a sauce to top off the meatloaf.  This gives it a little sweet taste which I think adds the perfect touch.   Together with a small salad and some home grown sweet corn and you have a complete comfy meal for these dark cold winter days.



Then best part of this meal - if there is any left, it tastes just as good or better the next day!

What a wonderful idea to put potatoes on the bottom! They must taste wonderful bathed in the meat juices. The first time I made meatloaf after I was married the recipe was from the Quaker Oats box too ;)

Meat loaf, or meat lump as we call it in my house is a favorite of all of us. Potatoes on the bottom. Never would have thought of that. I am glad you said you said you drain it part way through.

I love meat loaf, and do my topping the way you do..Unfortunately, I am the only one here who does!!
Love it on a sandwich the next day!

Oh I love the idea of potatoes underneath. A side dish and main in one is awesome and I bet the potatoes soak up good flavor. I'm glad you listened to your SIL so you could pass it along! I think my mom basically uses the quaker oats recipe as well..but she has over the years adjusted to our family's taste. Recipes on boxes & packages are usually really good. Makes you like their products better! Thanks for joining me Barb and sorry about the Mr. LInky troubles.

I use a version of the quaker recipe as well - it is what we grew up with but I had never heard of adding potatoes to the bottom until now! It sounds like a wonderful idea and I am going to try it tomorrow. We always have scalloped potatoes with meat loaf (another carryover from my youth) but I bet these are probably more flavorful.
