Ina's Baked Shrimp Scampi

Remembering I still had some shrimp frozen bought from the Fabian Seafood truck I scoured the recipe file for something special.  Popping out, of course,  a recipe from the Barefoot Contessa!

Peeled, deveined and cutting the three chef's cut so the tails wouldn't curl was the 1st step..


Marinating the shrimp with the oil and wine ( A little extra wine) and placing them in a casserole..



Baked as directed, then placed under the broiler (I had a "Carol" moment and kept in under a tad too long) but still tasted great!


So scrumptious and flavorful... in some of the reviews a few made the comment they didn't think it had much flavor!  All I can say is those individuals either made it wrong or had NO taste buds!

Also had some strawberries I needed to use up..even though I love my standard Easy Strawberry Pie, I wanted to try a different one.  Again, checking out my recipes saw this one with Cool Whip!  Using sugar free jello, lite cool whip and a reduce-fat graham pie crust, this pie does not make you feel you are missing any flavor at all!  Delicious and not any guilt whatsoever is cutting a nice big slice!

Was the little extra wine for the shrimp or for the Chef? :)

I think the Carol moment adds a nice touch of flavor, at least that's what I tell my family, LOL! Barb, it looks delicious! and a great looking pie, I love cool whip!

I think your shrimp look wonderful..touches of Carol and all! I've made that pie before and you're right..you don't miss the calories. Looks like a really nice light meal Barb.

I need a tutorial on the three chef's cut, Barb! Three is a appetizer at one of our favorite restaurants for Shrimp de Jonghe that I've been trying to replicate and home and this might be pretty close! Fabian should be back in town right before Labor Day so I'll need to stock up.

The shrimp dish looks wonderful - I love shrimp scampi and this version looks easy (except for the 3 cut thing). I loved how you added the extra wine to the shrimp and didn't drink it :)
