Cold Snowy Morning - Time to Bake

Woke up this morning to about 3 inches of cold, wet and very heavy snow!  Was rather hoping we wouldn't get snow until around February! (Wishful thinking)  It did give up a beautiful hoar frost - but did create havoc on many of the tree limbs...


Went through some recipes I had been wanting to try for the upcoming holidays to see if they would be something the family would like and came across one of Giada's...
Mini Chocolate-Meringue Cupcakes


The recipe is a little odd - check it out yourself  HERE - it looks a bit confusing but came together rather quickly.  The cinnamon gives the chocolate a unique flavor that I really liked, and folding in the meringue made them very light and moist.  If you read the reviews many were disappointed that the cupcakes "fall" after you bring them out of the oven.  Mine also fell, but I didn't think it mattered that much.  The key is to fill the mini liners to the TOP!  They form just a little bit of a crust which gives you a special surprise when you bite into it.  By drizzling the frosting gives you just the right amount of sweetness, no need to pile a large glob of frosting on them.  These are a keeper and will make them again, but I will get the 'official' taste test tomorrow when my friend Sue stops by to grab some for her and her hubby to taste.  I have a strange feeling they will pass with flying colors....



Someone was standing by so sweetly as I was baking that I had to snap a photo before I yelled at Tux to get down off the chair...

Yikes, snow...you aren't that far from me. Hope we don't get any for at least another month! Tux is beautiful.

We're still having nice weather, not to gloat or anything but my windows were wide open today!
Your cupcakes look awesome, and I bet they taste fantastic. I would love them, light inside, crust outside. Sounds perfect! Tux is cute!

Snow!!! Already??? Unbelievable! Makes me want a fire in the fireplace! Yummy looking cupcakes! I love the combo of cinnamon and chocolate! And sweet Tux...what a cutie! I always have several of my staff keeping me company when I am cooking. Enjoy your Sunday...hugs...Debbie

Thankfully, we were spared this time around. I love baking on a snowy day too and filling the house with warmth and good smells. I like the idea of the meringue in these. I'll bet they're delicious!

The cupcakes look delicious! Not so much on the cat! :)
Just saying, it is going to be 60 and sunny here today, but I am sure that white cwap will attack us too!

I have never seen cupcakes like that but with your recommendation I will definitely try them.

Cute "little" Tuxxy :-) Love his white feet. Your snow looks purty from here. We may (or may not) get a half inch or so here. I'm not really ready for that either to be honest though.
