Sunday night supper was a pork loin roasted with baby yukon potatoes. I seasoned the pork with Herbs de Provence making it one of the most flavorful pieces of pork I have ever had! Previously, I had only used this spice on chicken or turkey, now I will use it on everything.
Cooked perfectly, even if I do say so myself!!

Pork loin is a favorite around here ... yours certainly looks tasty. But at our house, sweet potatoes are REQUIRED with it. Barb, I would have never thought to use herbes de provence on pork. It really does look perfectly cooked. Good job!
Well what a coincidence. I just picked up a pork loin this morning. Now I may change my plans for how I was going to cook it. Yummmm.

Herbs d'Provence is my favorite seasoning. I bought a pound of it from San Francisco Herb Co. last year and use it in everything...herb bread is fantastic with it! Love the mosaic and your current Christmas decorating post...beautiful color.
