Foodie Friday - Flashback Friday

Joining Gollum for Foodie Friday and Suzy for Flashback Friday to show you again a beautiful Christmas cookie - Paula Deen's Magnolia Lace Trumpets.  A little time consuming but well worth it, plus they look fantastic on a cookie tray!



After Thanksgiving I will start making cookies for Christmas trays, freezing them until it's time to make the gift boxes.  This is the time of year I really love my food saver!!!

Martha's Madelines



Was going through my files to see what I could post for Flashback Friday, which is hosted by Suzy from Kitchen Bouquet.  ( Check out her blog for other flashbacks)  THEN, I saw where Carol had posted about her madelines.  WELL, let me tell you MY madelines are fantastic, easy to make, and I use a mini madeline pan so you don't feel as guilty when you pop two, three or more in a single setting.



Some I left plain, while others I topped them with powdered sugar.  Check out my link from 2009 HERE for the recipe and more photos.  Personally, I think using cake flour and adding the lemon oil makes this recipe absolutely scrumptious!!!

Angel Food Cupcakes

Last year I made these for our Easter celebration, and were thoroughly enjoyed by all.  They are definitly my favorite cupcake, with the light sweet angel food and the creamy and oh-so-tasty marshmallow frosting.  Click HERE for the recipe!!  Thanks to Susan from Savoring Time in the Kitchen for the recipe....

FLASHBACK FRIDAY - Monkey Bread

I'm joining my good friend, Suzy at Kitchen Bouquet, for her Flashback Friday.  Stop by her blog to link to others reminiscing past recipes!



There are hundreds of recipes out there for monkey bread, made a variety of ways with just as many different ingredients.  My recipe is one my Mom made quite often, not just for Sunday mornings.  I like to make it on Saturday morning..something to "snack" on as you start the day.  This is such a simple and quick recipe, start to finish in no time at all!


Quick Caramel Rolls - Monkey Bread

1 stick butter
¾ Cup brown sugar
1 tsp vanilla
2 Tbsp  water
2 cans Buttermilk biscuits
 
Cut biscuits into ⅓’s into a bundt pan. Melt butter, add brown sugar, vanilla & water. Pour butter mixture over biscuits.

Bake a 350 for 30 minutes. Turn out on plate and serve hot.
 
Optional: Place chopped nuts of your choice in the bottom of the bundt pan before you place the cut-up biscuits... pecans are wonderful with it!

FLASHBACK FRIDAY...MEAT LOAF !!

Joining Suzy of Kitchen Bouquet with Flashback Friday... I think the meat loaf was even before my official blogging days!


One of the great comfort foods all over the country.  I orginally used the recipe right off the Quaker Oats box, then started adding in whatever I liked at the time...  Lots of diced onions is a must, then any seasonings you particular like.  A number of years ago my SIL convinced me to add thinly sliced potatoes on the bottom of the meat loaf.  Half way through baking, I drain the meat loaf to get rid of some of the fat from the ground beef. 



In the last ten minutes of baking I mix together brown sugar and catsup for a sauce to top off the meatloaf.  This gives it a little sweet taste which I think adds the perfect touch.   Together with a small salad and some home grown sweet corn and you have a complete comfy meal for these dark cold winter days.



Then best part of this meal - if there is any left, it tastes just as good or better the next day!

Flashback Friday - Sinful Christmas Goodies


Suzy from Kitchen Bouquet is taking a short break but was sweet enough to put Mr. Linky up for anyone who wants to reminisce...

My all time favorite Christmas candy is Divinity..it was also my Dad's favorite. The main difference between us is that Dad liked Black Walnuts in his... I DON'T !! Each year I make a trip to the cemetery to leave Dad a piece of divinity and wish him a Merry Christmas. I have visions of some squirrel out there Christmas Day running around with sugar overload!



My Aunt Valeria’s Divinity recipe is the ULTIMATE!!! The very best of the best …
Even when you don’t get it dropped fast enough and it looks a little “off” it still tastes just like the “pretty” ones. It literally melts in your mouth, almost pure sugar, and not the greatest health food, but that is why you only have it at Christmas! The time of year when we all have things we probably shouldn’t!



Aunt Valeria’s Divinity

3 Cups sugar
½ Cup warm water
½ Cup white corn syrup
3 egg whites or ½ Cup (be sure)
½ tsp cream of tartar
½ tsp salt
1 tsp vanilla
Walnuts or pecans (optional)

Place sugar, water and corn syrup in heavy pan, bring to a boil and cook to a hard crack
Stage. While syrup is cooking, beat the egg whites, cream of tartar and salt – do not beat dry, just until it peaks.

Pour syrup mixture into egg whites slowly with the mixer at moderate speed. Beat until the mixture stand in soft peaks – 10 to 15 minutes. (Don’t give up) Add vanilla after the mixture is ready to drop.

Drop by teaspoonfuls onto waxed paper, pushing it off the spoon with your finger – do this QUICKLY! Top with nuts is optional. It is very helpful if you have at least two people dropping the mixture on the waxed paper.


The other flashback is Magnolia Lace Trumpets... a recipe from Paula Deen! The other night on Iron Chef she made them with Cat Cora! They can be a little frustrating to make but they are worth it!

A Dream or a Nightmare...

A number of my fellow bloggers have me remembering Christmas 2008 Baking Extravaganza! Still haven't decided if it was a dream or a nightmare.

I put the proverbial "foot in my mouth" when I declared I would bake a cookie or candy every day until December 24th! Can't remember the exact date I made the declaration, but I do know it was in EARLY December!

I've been having a craving for some warm chocolate chip cookies. So I went back into my recipe file and found this Hazelnut Chocolate Chip Cookie from Giada I've made before and immediately remembered how good they were.



I will be enjoying these with a nice large glass of milk this weekend.....

I made this pumpkin roll last year for the first time - you can get the recipe at All Recipes... An easy and delicious recipe..the family loved it.. I think I ended up making it about three times last year.




Have to share my sisters', Laurie, front door decorated for Halloween..I wonder if the kids will think twice before they knock on the door tomorrow night.....

Flashback Friday - Chicken Pot Pie


Just a very quick post to join Suzy at Kitchen Bouquet with her "Flashback Friday" Check out her post and the links to other flashbacks!!




This was actually the very first chicken pot pie I ever made one year ago - the photo was taken on Oct 18, 2008!! I only remembered it after I saw Mary's post on One Perfect Bite showing us her chicken pot pie! After reading her recipe I won't even bother posting mine! There are so many out on the net but I'm anxious to try Mary's... especially since it is "tried and true".

Time to think about warm, homey, filling meals for the cold months ahead. The chicken pot pie is one that is hard to beat when you think of the ultimate 'comfort food'.

Get your chickie dishes out and cook up a storm!!!

FLASHBACK FRIDAY - Lemon Berry Cake



I'm way overdue in participating in Flashback Friday with Suzy at Kitchen Bouquet, my apologies dear friend! Make sure you check out Suzy's blog and link to other "Flashbacks"!




My flashback was a creation by Debbie at Mountain Breaths, Lemon Berry Cake with Mascarpone Filling. Debbie recreated this cake after she enjoyed it at a restaurant,it does taste delicious and is a nice change from the old stand-by cakes we make in a pinch. I used raspberries and blueberries in my version. Thanks Debbie for sharing this wonderful recipe!!

Lemon Berry Cake with Mascarpone Filling

Two Layer Cake:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 pound (1 stick) salted butter
1/4 cup finely minced lemon zest
1 cup sugar
3 eggs
1 cup sour cream


Preheat oven to 350 degrees. Butter two 8" round baking pans and set aside. Prepare crumb topping and set aside.

Cake instructions:
Sift together flour, baking powder and baking soda, and set aside.

With a mixer, cream butter and lemon zest until the butter is soft. Add the sugar and beat to mix well. Add the eggs, one at a time, beating after each addition until thoroughly incorporated. Scrape down the bowl as needed. On low speed, add the dry ingredients in three batches alternately with the sour cream in two batches, beating only until incorporated after each addition. Scrape batter into buttered pans and smooth the top. Sprinkle each cake batter with crumb topping and mixed berries (I used a mixture of blackberries, blueberries, strawberries and raspberries). Bake for 30 to 45 minutes, until a cake tester or toothpick inserted in the middle comes out clean and dry. Baking time may vary with different ovens and types of pans.

Once cake has cooled, remove from pans. (Once cool, I wrapped each layer individually in foil and kept refrigerated until I was ready to use)

Prepare the mascarpone cream filling:
12-ounces mascarpone cheese, cold
1/4 cup light cream (half & half)
4 tbsp powdered sugar, or to taste

Beat all ingredients together with a whisk until soft peaks form. If you want to make the filling sweeter, then add a bit more sugar. You might have to add a little more cream to keep the filling from getting too stiff.

For the crumb topping:
1 cup all-purpose flour
2/3 cup granulated sugar
grated zest of 1 lemon
8 Tbs. (1 stick) of butter, melted

Mix together until it looks like little peas.

Debbie's notes:

I used a bag of frozen mixed berries. It gives it a great flavor to
include all four berries.

This dessert is served cold, and keeps well in the fridge for 3-4 days.

Optional: You can drizzle some raspberry sauce on the plate, or sprinkle with confectioners sugar
