Cold Snowy Morning - Time to Bake

Woke up this morning to about 3 inches of cold, wet and very heavy snow!  Was rather hoping we wouldn't get snow until around February! (Wishful thinking)  It did give up a beautiful hoar frost - but did create havoc on many of the tree limbs...


Went through some recipes I had been wanting to try for the upcoming holidays to see if they would be something the family would like and came across one of Giada's...
Mini Chocolate-Meringue Cupcakes


The recipe is a little odd - check it out yourself  HERE - it looks a bit confusing but came together rather quickly.  The cinnamon gives the chocolate a unique flavor that I really liked, and folding in the meringue made them very light and moist.  If you read the reviews many were disappointed that the cupcakes "fall" after you bring them out of the oven.  Mine also fell, but I didn't think it mattered that much.  The key is to fill the mini liners to the TOP!  They form just a little bit of a crust which gives you a special surprise when you bite into it.  By drizzling the frosting gives you just the right amount of sweetness, no need to pile a large glob of frosting on them.  These are a keeper and will make them again, but I will get the 'official' taste test tomorrow when my friend Sue stops by to grab some for her and her hubby to taste.  I have a strange feeling they will pass with flying colors....

MOSAIC MONDAY - HOAR FROST

Struggling to come up with a mosaic for Mary's Mosaic Monday. then realized the beautiful Hoar Frost occurance we had this past week!  By noon, once the temps warmed up it was all gone....until then it was so gorgeous to see!




When frost forms as minute ice crystals covering the ground, we just call it all frost. But sometimes the frost grains grow larger and are called hoar frost crystals. Good hoarfrost is not that uncommon if you watch for it. Hoar frost grows whenever it's cold outside and there is an ample source of water vapor nearby.

I'm sharing this mosaic for Mosaic Monday at Mary's Little Red House   You'll see some outstanding photography and I've heard it is Mary's birthday as well.....
