I ran across this recipe from Cathy (Wives with Knives) which she posted a year ago. It evidently peaked my interest since I copied and pasted it into my file. It goes without saying mine does not look as good as Cathy's, but I would bet it tasted just as good!!
1 tablespoon olive oil
1/2 small onion, diced
4 large mushrooms chopped
1 cup diced Canadian bacon
1 small can diced green chiles
7 or more spears of asparagus chopped however you like
3/4 cup grated cheese (I used Colby and Monterey Jack )
5 eggs, lightly beaten
1 cup whipping cream (I didn't have 1/2 &1/2)
Sea salt and freshly ground black pepper to taste
1 9-inch pie shell, either homemade or purchased (Guess which one I used)
Preheat oven to 375 degrees. Heat olive oil in a medium skillet and saute the onion and mushrooms until tender.
Combine the Canadian bacon, green chiles asparagus and grated cheese.
Add sauteed onion and mushrooms.
Mix the beaten eggs and whipping cream. Add salt and pepper and the bacon mixture. Combine well and pour into the pie shell. Bake 30-40 minutes or until a tester inserted in the center of the quiche comes out clean. Let cool for about 10 minutes before slicing.
Cathy had made the comment you could add whatever you like, so I took it at face value! I added more liquid due to the addition of the asparagus. It was so moist, the asparagus was perfectly tender not mushy.
So happy it turned out so well, this will definitely be a favorite now. It will be fun to experiment with different veggies and ingredients now that I have this spectacular base as a starter.

That looks and sounds delicious Barb! I'm trying the eating better routine myself. I tried getting a head start and dieted in December. Even with my occasional splurges I lost about 8 pounds so I am hoping to do even better without all those caloric distractions! Love the header!
Gosh, this looks delish, Barb! I love quiche. And it freezes well too. I like the idea of adding chilis.

Cathy does make wonderful quiches! This one looks so delicious and hearty with the bacon, cheese and cream! I know we would love this but we're both trying to cut down on cholesterol for a little while. I have to see if I have this one in my file otherwise I'm grabbing a copy.
I love Cathy's recipes, very straight forward.
I love quiche, not with asparagus though! With quiche you can add or leave out without harm.
