Honey-of-a-Meal Chicken

I just received my February/March Taste of Home this past week and there were quite a few recipes I want to try.  For this one, I just happened to have everything I needed.  As usual I changed it a little to suit my time and ease.  (Carol is rubbing off on me, God help us all)



The recipe actually calls for making this in a pressure cooker, but I used the oven instead, baking at 325 for about an hour.  That and using honey mustard, I followed everything else to a tee!  Well, almost… I used chicken tenders instead of bone-in chicken breasts.  THEN, the rest was the same!


Chicken turned out very tender – and loved the sauce that was left in the pan to spoon over the chicken.  Along with sides of oven-roasted baby Yukons and asparagus completed the meal perfectly.  I thought the honey would overwhelm the dish, but it didn’t in the least.  Will make this one again.




My youngest, Nick, had his 30th birthday last week and I couldn’t find mascarpone cheese any where to make his favorite cupcakes.  Finally found some yesterday so I made them today for him.  These are his favorites so I try to make them up for him.  One of the gals he works with  'asked’ him before his birthday if his Mom was going to make those cupcakes!  He takes some to her since she loves them also.  They are Strawberry and Mascarpone Filled Cupcakes by Giada De Laurentiis.



Took a few minutes to dip some strawberries also…for once the grocery has some decent berries for this time of year…

The chicken sounds great but I would have passed right by the recipe once I saw pressure cooker! Glad you saw through that and baked it in the oven and enjoyed it.

Now please pass the cupcake...I need to make some, and they are perfect for Valentine's.

LOL, I knew somehow I could influence you. Somehow. Hey, at least you didn't burn anything! The chicken looks great, and yep, good for you for not passing by the recipe. Pressure cookers scare me worse than flames :)

Pressure cookers scare me too so I am with Debbie and probably wouldn't have looked at the recipe once I saw that. Kudos for you for making adjustments and figuring out a great way to prepare it.

It definitely looks good as well as the cupcake & strawberry. Stay warm this week - another cold one ahead.

I really want a pressure cooker. But oy...where to put it! There was another recipe for stuffed bell peppers I wanted to try (maybe in the same TOH issue) and I even bought big pretty bell peppers then reread the recipe and saw it was for a pressure cooker. I'm sure I could convert, but I bet the pressure cooker makes a very quick meal out of it! Thanks for joining in Barb - I always love to see what you will pick to do. You are a great recipe picker! Those cupcakes look as awesome as the last time I saw them. I need to give those a try.

I hope Carol doesn't get a pressure cooker. I have to check their range...No, I heard they are safe now, not like the old ones.

This looks so good! I finally gave my brand new pressure cooker (it was a gift) to Goodwill...waaay too scared of it! lol Those cupcakes look fabulous! Happy birthday to your son! He's the same age as my daughter! Happy week!...hugs...Debbie

I've never been able to bring myself to buy a pressure cooker although my mother used one all the time without any explosions. Yummy dinner, Barb, and those cupcakes look perfect for any celebration. Love the strawberry filling.

Barb, that chicken looks and sounds delicious. Anything with mascarpone has to be yummy!

I used to have a pressure cooker...not for a while now though. I see them using them on cooking shows. Of course, speed is always an issue there.
Glad to see you used the oven...it looks delicious. As do Giada's cupcakes. I saw her make them...glad you think they're good.

I always was afraid of pressure cookers so I'm glad you opted for the oven. Other than the venue for cooking, this recipe looks delicious! Happy belated birthday to your Nick and how nice that they were even requested by his fellow workers :) That says a lot!
