It’s been almost two years since I did this post, and it is still one of my favorite “go-to” meals to prepare.
Slow-Baked Pork Chop
Hasselback Potato
Roasted Asparagus with Hollandaise Sauce
Susan from Savoring Time in the Kitchen had posted about the potatoes, and I have made them many, many times since then! It’s fun using different combinations of herbs and seasonings to compliment whatever you are serving…pork, beef, chicken.
The chops I just dredge in flour, brown in a little amount of olive oil and place in a 2 qt covered casserole dish that has about 1/3 cup water and a few shots of worcestershire sauce. Top with sliced onions and bake at 300-325 until done to your own taste.

What a delicious meal!
Now that looks really yummy! I have never seen a potato prepared that way. I am going to check it out since I think my grandson would really like that! Happy weekend!...hugs...Debbie
Barb, your meal looks mouth-watering delicious. I make potatoes that way often...stuff a little Gorgonzola between the slices...yummy!
Looks great, Barb! Was never a fan of asparagus, but I really do like it now, topped with hollandaise, and next to the potatoes and pork chop, looks like a perfect dinner!
We like it the way Marigene said too, either gorgonzola or parm.
I remember this post. Still looks delicious!
This meal looks awesome. Beats the heck out of the tuna sandwiches we had tonight! Definitely worthy of a flashback. Thanks for playing this week!
Flashbacks are a great idea. There were so many posts back in the beginning that were wonderful...before I was getting comments.
That looks great! Very well presented. Sounds a tasty one!

I think everyone loves these which reminds me, I haven't made them in way too long. What a wonderful-looking meal, Barb!
Barb, I would love the entire meal! I've never tried the potatoes, but they do make a nice presentation. Your pork chops are the main attraction though!
